All my life growing up, I always used to cook with my grandmother. So I was always intrigued about food. After several jobs, I really couldn't find nothing I really liked. And so I started Balagio in 1997. And now, we have two locations. Roughly 70 employees.

Balagio is a family-oriented restaurant. Everything is homemade scratch food. We make our own pasta. We cut our own meat. We make our own sauces.

I started peeling potatoes in the back when I was eight, nine years old. And it's like one big family here. We were doing a lot of manual payroll. My dad was doing it, and you can just tell it was tough. There was a lot of paperwork. Worrying about the tax codes. A lot of office hours involved, taking up a lot of my time. Now with Paychex, one day a week, a 10-15 minute call. Paychex definitely helps us manage our cash flow. We chose Paychex because we felt that Paychex is like having a partner in our business. We use Paychex for payroll, reporting features, direct deposit. Our service has been wonderful.

Our managers call in our payroll every week. Everybody is very happy with it. It's always a good phone call. There's never been something where I got off the phone and I was like, "What's going on here." I've always got my answer. They keep us compliant whenever I need. There's new regulations or changes, I'm emailed immediately from Paychex telling us exactly what's going on, and what's new, what needs to be done. They keep us aware of minimum wage. If we do hire high school students, they're only allowed to work so many hours. There's probably four or five new laws in the last three or four years that they've made us aware that we had to comply with. They're very professional. They do a great job. It just takes a lot of pressure off you.

And it's another aspect of the business that you don't have to worry about. They help me achieve my goals every week. We recognize our customers, and we appreciate it, and we tell them. It's the look on people's faces when I walk to the table and ask how everything is. And they say, "It's awesome. We love it. Can't wait to come back."

That makes everything good.
